1. Sautéd onion, garlic and shiitake – set aside
2. Add the broth, water and cauliflower to a pan. Simmer until cauliflower softens.
3. Add all above to a high speed blender. (Save some mushrooms for garnish)
4. Add tbs of nutritional yeast and blitz again.
5. Serve hot.
Optional: Top with olive oil, pine nuts and mushrooms
